Muffins!

I love breakfast foods and dessert and found a recipe for the best blueberry muffins I’ve ever had! These muffins are really sweet and have a crumbly top, which I love. I’m not a good cook or baker by any means and this was a simple recipe to follow. The ingredients are common for a lot of recipes and can definitely be used again. Blueberries aren’t in season right now and are relatively expensive so I used frozen blueberries that I thawed which was much cheaper and still delicious.

Ingredients
         1 1/2 cups all-purpose flour
         3/4 cup white sugar
         1/2 teaspoon salt
         2 teaspoons baking powder
         1/3 cup vegetable oil
         1 egg
         1/3 cup milk
         1 cup fresh blueberries
         1/2 cup white sugar
         1/3 cup all-purpose flour
         1/4 cup butter, cubed
         1 1/2 teaspoons ground cinnamon

Directions
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done.

  2. So you said in your last post that you like to find ways to cook healthy in college, yet this blog post is about muffins. Muffins are a sweet treat which are loaded with calories. This recipe has butter, sugar, oil, and more. Do you consider these muffins a healthy choice for college students?

  3. Your right I generally wouldn't consider a muffin something healthy. However, in a college setting a muffin is a lot healthier than many of the things we eat. From late night pizzas, to cheese steaks and garbage fries college kids tend to eat things high in fats and cholesterol. Also, when you considered "diet" foods and snacks you purchase from the grocery store, they tend to have unhealthy ingredients such as aspartame, and various dyes, chemicals and preservatives. So in comparison, a homemade muffin seems to be a healthier choice than many store bought desserts. .
